COOKING INSTRUCTIONS:
Bring a large pot of water to a rolling boil (it should look like a jacuzzi!)
Add a generous amount of salt (it should take like sea water)
Place a test noodle in the water and boil between 2-5 minutes (depends on thickness; consult your class instruction on timeframe)
Once test noodles passes; add the remaining pasta
Boil between 2-5 minutes
If using a non-butter sauce, add the pasta directly to the saucepan (ensure to get a bit of pasta water to flavor the sauce). Mix in the pasta
If using a butter sauce (i.e. sage and brown butter) place pasta on a plate and drizzle on the sauce (optional: finish with fresshly grated parmigiano reggiano
